Traceability in the Poultry Sector in the Russian Federation

Traceability refers to the completeness of and the ability to access the information about each step in a process or a supply chain. It is the ability to chronologically interrelate uniquely identifiable entities in a verifiable way. In the food industry, it contributes to food safety and brings economic benefits, as it provides reassuring information to consumers and makes it possible to trace a problem back to its source in a technological process.
This publication was prepared by the All-Russia Research Institute for Poultry Processing (VNIIPP) under the UNECE grant for the project on traceability in the poultry sector in the Russian Federation. The reports present the concept of traceability, technological and business processes in the poultry sector, as well as technical specifications for setting up an operational system of traceability at the enterprise level.
